EASTER BUNNY BUTT COOKIES

There's only a few days left until Easter, so I wanted to share with you guys, a super cute and easy bunny butt cookies recipe! Oh by the way, is it just more or does the easter edition chocolates taste so much better than regular chocolate bars? Anyone else been enjoy eating Cadbury Mini Eggs and Creme Egg chocolates? (I think it's time to hit the gym again). I also made a YouTube video on making the Bunny Butt Cookies HERE! To make these delicious cookies you will need:

PREP TIME: 30 MINUTES | COOK TIME: 14 MINUTES | DIFFICULTY: EASY

COOKIES INGREDIENTS

+ 250g unsalted butter, softened
+ 1 cup white sugar
+ 1/2 teaspoon salt
+ 1 large egg
+ 1 teaspoon vanilla extract
+ 3 cups plain flour

Step 1: Using an electric mixer with a large bowl, beat butter, sugar and salt on medium-high speed until light and fluffy. Add egg, beating well. Add vanilla. Beat until combined. Reduce speed to low. Add flour, beating until just combined (do not over-mix). Divide dough in half. Shape each dough portion into a disc. Cover with plastic wrap. Refrigerate for at least 2 hours or until firm

Step 2: Remove both disc of dough from fridge. Stand at room temperature for 5 to 10 minutes or until soft enough to roll. Roll between 2 sheets baking paper until 3mm thick

Step 3: Preheat oven to 180°C/160°C fan-forced. Line 2 large baking trays with baking paper. Using oval-shaped cutters, cut shapes from dough, re-rolling and cutting any dough scraps. Transfer to prepared trays.

Step 4: Bake for 10 to 14 minutes or until firm and just starting to turn golden around edges, swapping trays halfway during cooking. Stand for 2 minutes. Transfer to a wire rack to cool completely.

DECORATING INGREDIENTS

+ Mini Marshmallows
+ Betty Crocker, Strawberry Frosting
+ Duncan hines, Vanilla frosting
+ Jelly Belly, Hello Kitty edition
+ Happy Candee, Strawberry

Step 1: Apply any choice of flavour of frosting onto the larger oval cookies. Spread evenly. Repeat the same process with the smaller oval cookies. (HINT! I separated the frosting and left one white and made one pink). (HINT TWO! You can make your own frosting, the store bought frosting help  saved a lot of time).

Step 2: For the bunny feet, place any candy beads/pearls or Jelly belly's. Also place any light pink candy or chocolate on the small oval cookie  for the ‘pads’ of the bunny feet.

Step 3: Place a mini marshmallow in the centre of the bunny butt body for it’s little bunny tail. (HINT THREE! You can also dip the mini marshmallows in some frosting and add some white sprinkles or glitter for a cool dazzle bunny tail).

Happy Easter baking!
Hope you all have a fantastic Easter break and enjoy eating all the chocolates!
