December is a time for lots of baking! I love baking, especially baking for people during the christmas season. I made these spiced christmas cookies today and they are super EASY to make! I also love that you can make them into all different christmassy shapes but my faves would have to be the stars and snowflake cookie cutters! PREP TIME: 30 MINUTES | COOK TIME: 10 MINUTES | DIFFICULTY: EASY
COOKIES INGREDIENTS
❆ 1 cup plain flour
❆ 1/2 cup brown sugar
❆ 1 teaspoon cinnamon
❆ 1/2 teaspoon mixed spice
❆ 75g unsalted butter, chopped
STEP ONE: Line two baking trays with non stick baking paper.
STEP TWO: Sift flour, sugar and spices into a large bowl. Using fingertips, rub in butter until mixture resembles coarse breadcrumbs. add golden syrup and mix to form a soft dough. Turn onto a lightly floured surface and knead for one or two minutes until dough is smooth. cover with plastic wrap and chill for thirty minutes.
STEP THREE: Preheat oven to 180c or 160c fan forced. Roll dough on a slightly floured surface until 5mm thick. Using cookie cutters, cut shapes from dough. Place on prepared trays, allowing room for spreading. Chill again for ten minutes.
STEP FOUR: Bake for ten minutes until pale golden. Cool on trays. Decorate with basic homemade icing or whatever suits you!

BASIC ICING INGREDIENTS
❆ 1 1/2 cups icing sugar
❆ 25g butter, softened
❆ 1 tablespoon milk or water
❆ Few drops of food colouring
STEP ONE: Using a wooden spoon, combine icing sugar, butter and milk in medium bowl until smooth. Add a touch of extra milk or water to get a glossier consistency.
STEP TWO: Add enough food colouring to tint icing to your desired colour! Mix well.
