HAPPY EASTER EVERYONE
Wishing everyone a happy and healthy easter weekend, only one more day of this easter holiday left! I'm super bummed that I wasn't able to bake anything easter-bunny related this year. I was sick the past couple of days and I had these awesome ideas all planned out, but I guess I shall save the ideas for next year! So today I did some baking and made these delicious classic lamingtons. Lamingtons are part of every Australian childhood (well I hope so) and I wanted to share with you all this quick and easy classic lamington recipe.
PREP TIME: 5 MINUTES | COOK TIME: 25 MINUTES | DIFFICULTY: EASY
INGREDIENTS:
+ 1 ⅓ cups Planing all purpose flour
+ ½ tsp baking powder
+ 8 eggs
+ 1 cup caster sugar
+ 100g unsalted butter, melted
+ 3 cups icing sugar, sifted
+ ¾ cup cocoa powder, sifted
+ 1 cup boiling water
+ ¼ cup milk
+ 75g butter, melted + extra
+ Desiccated coconut, to coat
STEP ONE: Preheat the oven to 180°C. Sift the flour and baking powder three times and set aside. Place the eggs and sugar in the bowl of an electric mixer and beat for 8-10 minutes (until it thickens, pale and tripled in volume). Sift the flour over the egg and sugar mixture and gently fold through using a metal spoon. Fold through the melted butter.
STEP TWO: Grease a square or rectangle tin and line the bases with non stick baking paper. Divide the mixture into the tins and bake for 25 minutes or until the cakes are springy to touch. Cool on a wire rack. Cut the sponges into 6cm rectangles.
STEP THREE: Mix the icing sugar, cocoa, water, milk and extra butter in a large bowl. Place the coconut in another bowl. Roll the sponge rectangles in the icing and then in the desiccated coconut. Place on a baking tray lined with non-stick baking paper and place in fridge until it sets.
